Peaches
We have a peach tree in our tiny side yard that, we've been told, hasn't produced any peaches in two years. I guess this tree is on a three-year rotation. Well, this year was the year to have peaches. They came in kind of late and we thought there wouldn't be anything worth eating due to the late freezes this spring. BUT, there were quite a few. I came home from being gone for three weeks and the tree was covered, with plenty on the ground. They were kind of small peaches, but SO good! Luckily, our neighbor loved them, too, so less went to waste. I collected as many as I could, and since I knew we wouldn't be able to eat them fast enough, I decided to make some quick and easy freezer jam. This is something I've never done before. I had watched my mom make peach jams, peach cobblers, peach flips, etc. growing up from our enormous peach trees (we used to get over a thousand peaches a year!). So, I knew that the easiest way to use up a lot of peaches would be to make freezer jam. Still, I assumed that it would take up a large chunk of my day. It did not. Not even an hour! And now we have lots of jars of YUMMY peach jam. I'm not usually a huge fan of jams, but peach freezer jam is my favorite. I get obsessed with making pancakes and replacing syrup with the peach jam. Pancakes, here I come!!!
